Little Foot

Soup Soup!


I could probably eat variations of soup, bread & cheese the rest of my life and be ok :)


Spicy kale, bean & chicken soup


Pan brigio & unpasteurized white cheddar cheese

I feel like soup is one thing you can make up and not mess up :)  Here is my latest experiment:

Spicy kale, bean & chicken soup

1 tablespoon olive oil
1 lb lean ground chicken
1 onion, chopped
1-2 carrots, finely chopped (or celery...whatever you have on hand/prefer)
2-3 garlic cloves, minced
2 Yukon Gold potatoes, diced
1 can navy beans
1 can butter beans
1-2 cans diced tomatoes 
3-5 cups chopped kale (depending on how much you like)
4-5 cups vegetable broth (depending on how thick you like your soup)
1 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon italian seasonings
1/2 teaspoon hot red pepper flakes (or to taste)
1 bay leaf
Splash of red cooking wine

Heat olive oil in a lare pot over medium head and brown the ground chicken (you can also use hamburger or ground turkey).  Salt and pepper to taste.  When chicken is almost done, add chopped onion, carrots (or celery) & garlic.  Saute until soft.  Next add the potatoes, beans, tomatoes, oregano, broth, italian seasonings, hot red pepper flakes & bay leaf.  Simmer for 20 minutes on medium heat or until potatoes are soft.  Add kale & cooking wine and simmer 5-10 more minutes.  Serve with bread & cheese.  Makes lots of yummy leftovers =)  Enjoy!
